
Not mine, but, a general idea!
Okay, I had a thought...yes, smarty pants, it happens!!
I had a couple of fresh Tomatillos, frozen corn, fresh Cilantro, onion, red pepper....you get the idea.
So, I defrosted a half bag of corn.
I added it to chopped tomatillos, diced red pepper, diced onions, cilantro and the juice of half a fresh lime. sea salt and fresh cracked black pepper. Mixed it together and refrigerated for a bit to get it all one temp.
I wrapped sea scallops with prosciutto, placed them in a broil proof *Corning Ware Side-kick* placed butter, salt & pepper around them while I was roasting 8 small asparagus spears in the oven...when they were done, took them out-about 8 minutes- and turned the oven to broil.
10 minutes later....I placed the corn salsa in a shallow bowl, put two scallops atop the salsa, added the asparagus on top of the scallops....no need for further flavors.
Just letting you know, hubby, who thinks hot=flavor, loved it!!!
